A few weeks ago I had ane of THOSE nights when I was completely unprepared for dinner. I had planned on throwing some Salsa Chicken into the crockpot, but completely forgot and ended up with 10 minutes to figure out what to feed my coiffure. I grabbed ingredients I already had in the fridge and threw together these super like shooting fish in a barrel Mexican Pizzas in literally 10 minutes. Luckily, they were a huge hit! The kids even requested them the adjacent dark. I honey it when I stumble upon new family favorites, and especially when the new recipes is as simple and salubrious every bit this one!

And, did I mention that you tin can consume i of these Mexican Pizzas ALL Past YOURSELF for around 250 calories!? AND 1 pizza has 6g of fiber and 11g of protein. AWE-SOME. You know you've always wanted to eat an unabridged pizza by yourself and non fifty-fifty feel guilty nigh it.

Anyway, hither is the quick, easy, and healthy existent nutrient recipe. Y'all can use bootleg Whole Wheat Tortillas, or just make sure you lot get 100% whole wheat ones from the store. Either one will work bang-up. Enjoy!

  • ane Whole Wheat Tortilla
  • 2 tablespoons chunky salsa
  • three tablespoons blackness beans, drained and rinsed
  • ¼ cup shredded part-skim mozarella cheese
  • ¼ crimson bell pepper, sliced
  • ¼ greenish bell pepper, sliced
  1. Preheat the oven to 350 degrees F.
  2. Spray both sides of the tortilla with a niggling olive oil. Bake for 3-iv minutes on each side, or until crisp and a little brown.
  3. Top with salsa, cheese, beans, and pepper slices.
  4. Return to the oven and cook until cheese is melted.
  5. Slice and eat the entire matter past yourself. ๐Ÿ™‚
